If I mount Exchange Mailbox in Outlook, can they see me going thru email on their Outlook?

I was asked to mount a users mailbox in outlook to look at specific emails. Can this user see me maneuvering thru his emails on his end? I know if i click on a new email it will show read on their end, but can they see me maneuvering thru different folders or viewing certain emails?

No the user cannot see you viewing there email.

If you open and unopened email the message will appear as opened to the user, but they cannot physically see you opening messages within there email.

so if i click on a certain folder and view emails with in their folder, their outlook client wont wont navigate to that folder as well?

No it will not.  Your outlook client will be running independently  of theirs.  They only thing they would notice is if you opened an unpoened message.  It would no longer be bolded.
