Mail flow to new Edge server is not occurring. Mail is still going out via HUB transport.

I setup a new Edge server and followed the steps and ended with a 'Start-EdgeSynchronization' which ran successfully. I now see on my Edge server the following Send Connectors:
- EdgeSync - Default-First-Name to Internet (Enabled)
- EdgeSync - Inbound to Default-First-Site-Name (Enabled)

I also see the following Send Connectors on my HUB Transport Send Connectors:
- EdgeSync - Default-First-Name to Internet (Enabled)
- EdgeSync - Inbound to Default-First-Site-Name (Enabled)
- SMTP Internet

I can also confirm the Edge Subscription shows in the Edge Subscriptions tab in the EMC. Ran 'Test-EdgeSynchronization' and all looks well there too.

Now when I send email out to the internet my HUB transport servers don't seem to hand off to the Edge server. I check the header on the test email and it came from my HUB transport. I don't see any evidence in the headers that my Edge was involved in the mail flow.  I should see the Edge server in the email headers, correct?  Am I missing a configuration step?

Thanks. That's the doc that I followed to install the Edge server and subscription.

1.Install the Edge Transport server role.

2.Verify that the Hub Transport servers and the Edge Transport server can locate one another by using Domain Name System (DNS) name resolution. For more information about this step, see Configuring DNS Settings for Exchange 2007 Servers.

3.Configure the objects and settings to be replicated to the Edge Transport server.

4.Run the New-EdgeSubscription cmdlet in the Exchange Management Shell on the Edge Transport server to export the Edge Subscription file.

5.Copy the Edge Subscription file to a Hub Transport server.

6.Run the New-EdgeSubscription cmdlet in the Exchange Management Shell or use the New Edge Subscription wizard in the Exchange Management Console to import the Edge Subscription file.

Ran the test commandlets to make sure the subscription is synching successfully but mail flow still seems to flow from the HUB directly to the internet and not hand off to the Edge. The headers on the test emails don't show my edge. Just the HUB transport.
