We tend to go to "properties" of a mail box and add SMTP email address  to users  X mail box, but I am not exactly sure what this does. Does this copy any email to user X mail box, or does this allow user x to login under their account?

If you add additional smtp addresses to an existing mailbox it just adds an additional address that is directed to that mailbox, it does not create an additional user or login.

Which is essentially receiving a copy of the email address going to the originating recipient?
When you add an SMTP address for a mailbox that makes that mailbox the recipient.
It does not create a new mailbox for each SMTP address and then copy to the mailbox.
