Best thing you can do is to start with the CCNP Voice certification.

Most likely you will have voice gateways in the network right? That is an area that requires some attention. I got CCVP certified about 6 months ago, so the path is now a little bit changed. My recommendations would be the following:
1- Start with Implementing Cisco Unified Communications Manager, Part 1 , this will give ya basic understanding of the Callmanager web interface, where to find your extensions ,and basic features.

2- Continue with Implementing Cisco Voice Communications and QoS v8.0, that intoduces the student to voice gateways and voice protocols, very useful.

3- Take the Implementing Cisco Unified Communications Manager, Part 2 , for more advanced features and configurations, like intersite-dialplans, device mobility and security.

4- Continue with the other exams as you wish.

Taking the certifications will give your staff not only the necessary foundations, but also the fact that they are getting certified motivates a lot, specially with Cisco being such a strong learning organization and being so widely recognized and valued.
