What defines an email's age in Exchange 2010?

What defines an email's age in Exchange 2010?  When a retention tag is set to remove deleted items older than 40 days, does this age counter reset if the email is moved  to deleted items, does it reset if a deleted item is accessed, or does this apply to the send date?

I haven't been able to find a clear answer on this.  Any help is appreciated.

Helped out tremendously!  I had items that weren't being removed using the retention policy.  These items were being archived using 3rd party, thus changing the modified date on the email.  Confirmed my suspicions.
