Pausing Print Jobs

We have law library in our organization where the public can come in and do research. They are allowed to print documents at a cost. I need a way to hold their print jobs until they go to the counter and pay for them. I know that you can set your printer to pause all jobs that are sent to the printer. But is there a way to pick the print job you want to print without printing the rest of the documents in the que?
