upgrading to sbs 2011 premium. your expert views requested

we are in the process of upgrading from sbs 2003 premium (sql server has minimal use at present, but is used).
The new dell server will have 2 x xeon 2.53ghz quad processors + 16 gb ram + raid 5 (5 x 600gb).
we would like to run the premium licence on the old dell server 2 x xeon 3ghz dual procesors + 3gb ram (1gb left) + 2 x 300 gb drives mirrored (raid 1).

we have 15 - 20 remote users that I would like to connect using remote access to the premium server to use word, excel, project and 5 access databases that will be transfered to the sql server eventually.

I am asking your expert opinion on:

can it be done using the old 32 bit server for the 2011 premium licenced setup?
what issues am i likely to encounter?
Any other advice to a desktop technician trying to punch above his weight?
