enabled the SMTP server within IIS 6. configured a SmartHost to connect to the SMTP relay server used on server. configured IIS 7 to send mail to localhost.

Send an email message to yourself from the server/application, and then check the message headers.
You should see that the message leaves the server, then goes to the smarthost, then goes to the recipient's email server.
