Install updates to Exchange 2010 SP1 muti-tenant

Hi experts!

Our company is hosting Exchange 2010 for some clients. I'm a bit uncomfortable and unfamiliar with only having the EMS and not EMC available for administration purposes. Therefore I have a couple of question for you. It is probably very simple, but I want to be sure how to do this before I start.

1. How do I verify what updates I need to install?
2. How do I install the updates I need the correct way?

I have googled some but I was unable to find any information regarding this.

We have the following setup:

2 DC
2 Mailbox server setup with DAG
2 Client Access and Hub Transport servers configured with NLB for load balancing and failover.

All the 6 servers is running Windows Server 2008 R2 SP1 - and they are all running virtually.

Tanks in advance.

Why don't you install Exchange tools in your machine. Check this.

Well, AFAIK the mangement tools cannot be used in an Exchange organization installed with the /hosting switch (Multi-Tenant). Correct me if I'm wrong..
