Can you explain folder redirection NTFS rights?

I'm getting the concept down but I can't put my finger on what Windows wants from me in terms of NTFS rights for folder redirection!  What I would like to do is have all my user's Documents folders remap to a common share on the server, and then have everyone's Downloads and Desktop folders remap to individual shares (but still accessible by other users for collaboration).

Can you help?
