SBS 2011 networking - dhcp, dns

I am configuring a small network with 2 servers and few client. Now ip addresses are managed by a router.  Should I reconfigure my network and setup dhcp and dns on sbs and disable it on the router?   I was planning to assign static ips to most of devices..

Definately.  SBS runs as a domain controller and has a pre-requisite that it runs DNS.  Your workstations will work a whole lot better if DHCP addresses are given out by the SBS server as well (DNS and domain information will come across as well).

Yes you should, it is recommended to let the SBS server run the dhcp server and dns is a must, without using the DNS of the SBS it would find it 's domain and you will get all kind of trouble.

Another thing that is not so clear to me  is how does this dns server knows where to look for hosts that does not have in his db? Do I have to tell my dns server where my isp dns server is?
SBS  DNS servers (I think all windows servers now) will automatically go out and get needed information most of the time. Occasionally you need to add in forwarders in the advanced properties of the server but usually you don't need to do anything except ensure the SBS server is looking at itself as the DNS Server.
out of preference, I usually set DNS forwarders to use Goolge's DNS servers (8.8.8.8 and 8.8.4.4) as they are generally some of the best DNS servers on the internet.

By default it will use root dns servers which are pre configured. But it is better to configure forwarders as said, use the ones from your isp or some free accesible like the Google ones
