I use DFS for my 20 file servers and give everyone  access to shares within the large company (but restrict via NTFS). Therefore, I would need to allow all subnets (within the company) access to the 20 file servers File and Print Sharing ports, correct? That is, for each file server, I should add a custom list of subnets to the File and Print Sharing firewall rule that includes all the company subnets?

I would think you would want to follow the industry standard:

PORT NUMBERS

You will need to look/search through the list to what your needs/application is.

Do you have a hardware firewall or are you talking about the MS firewall that is on each server?
Usually, the file and printer sharing is a defined option.
