Exchange 2010 taking up all resources on Server 2008 R2

I'm new to Exchange 2010 and Server 2008 R2. We have been running both for about 3 months now and I have noticed that the whole server itself is super slow.
Just to work on the server is a nightmare, minutes between mouse clicks. Store.exe is taking up all memory and edgetransport.exe taking up CPU.
I have done some research and everything says this is normal and memory will be released if it's needed elsewhere. But I think something may be wrong since I can barely navigate on the server?
Is this only happening to me?

You don't say what kind of hardware you have. As your research turned up, both Exchange and SQL are designed to be memory hogs but will play nice. That said it is entirely possible that you have an under powered server. What CPU and memory do you have? How big is your information store?
