Query on Message Headers

We seem to have trouble receiving email from a partner company. We're both running Exchange 2007. Route is:

Exchange 2007 MBX (Partner) > Exchange 2007 Hub (Partner) > SMTP Gateway (Partner) > INTERNET > Edge (us) > Exchange 2007 Hub/Mailbox server (us)

There seems to be a delay between their SMTP Gateway server and our Exchange 2007 Edge server, looking at the SMTP headers on these emails that are delayed.

One question - I see a Received: line in the header for each server the email passes through. If a server's clock is wrong or something, is it concievable that it would stamp the wrong time on the header?
