Best fail over setup for Windows 2008 running Exchange 2007.

I'm trying to put a solution together for our business running Windows 2008/SBS with Exchange on it, We currently use McAfee hosted/spam services for email which works very well in case our in-house server goes down, but I was trying to setup something off site maybe with Amazon Web Services where it could replicate a full image of our in house server including files, permissions, active directory, exchange, etc... so we could vpn from our notebook clients into the cloud and access just about anything in our office in case of a server crash / internet connection being down.

So that is the idea and I would like to read what you all may have to say about it and how can I achieve a redundant solution.

This is the best money I have ever spent. I cannot not tell you how many times these folks have saved my bacon. I learn so much from the contributors.
