Exchange 2007 Reject incoming email for disabled users

I have an Exchange 2007 server.  If an employee gets fired what steps do I need to take to make sure when someone email's that user they receive NDR bounce back message?

If you want to keep email messages on this mailbox; you can't remove the maibox.
So, you can :
- disable the user
- change the email adress on the "email addresses" tabs on the mailbox properties by a random adress or a local adress (ex : myuser@mydomain.local).

But if you don't want to keep email messages on this mailbox...just delete the mailbox :).
