$mbxs = get-mailbox -resultsize unlimited (for all exchange users)
$mbxs = get-mailbox -OrganizationalUnit domain.local/users  (for all users in a specific OU)
$mbxs = get-mailbox -Server servername (for all users in a specific server)

then

$mbxs | % { set-mailbox $_.DistinguishedName -Alias $_.SamAccountName}
