Right now I have CSS styled the I Like It and Tags & Notes away....

But can I - by the CA or elsewhere disable the display of the I Like It and Tags & Notes AND still keep the link to Mysites in the dropdown?

Furthermore - How can I display the user department of the logged in user (right next to the users name)

You configure this in the User Profile Service Application - http://technet.microsoft.com/en-us/library/ee721063.aspx

It's solved... all authentificated users where in there - so I added the specific OU and removed the social features for that group..
