Is there a way I can create or pull a report for the number of simultaneous connections (outlook, owa, etc) to our exchange 2003 server during business hours?

We need this data to help us size our exchange 2010 servers.

you will be able to find all you need with "performance monitor" on your exchange server.

Could you be more specific as to what counters to track?

Specifically we need to know the number of unique users currently logged on

MSExchangeIS\Active User Count
would probably be best for unique users count.

A good description and differences of other useful counters can be found at http://blogs.technet.com/b/exchange/archive/2006/09/11/3394858.aspx

Ps: Generally speaking around 11 AM and  4PM are the peak moments.
