SBS 2003 mermory runs full and server stops responding

a client uses sbs 2003 with recent updates. Since a couple of weeks the server consumes all physical memory and gets into a state where no service responds anymore.
There is no blue screen, no crashes, just no memory available. Task manager does not show any abnormality that I ever stumbled across.
First it was enough to restart every night by script. No the server runs into that state again at early afternoon after restarting the server at 05:00 am.
After a restart everything looks fine.
A couple of minutes before the server does not respond anymore services like store.exe can not save any new emails etc. Items are received after restart some time 4 times.
All HDs have enough space, DUAL Xeon, no high CPU usage.
Can anyone help troubleshooting?
The server has 4 GB physical memory.
