This is actually reasonably easy:
1: Open the Windows SBS Console
2: Go to the Network tab, and the Connectivity sub-tab
3: click "Set up your internet address" on the right-hand side
4: Click "next" and then select "I already have a domain name i want to use", then next again
5: Assuming you have a web-console to manage the domain, select "I want to manage the domain name myself" and click next.
6: On the next page, click "Advanced Settings", which will load up a page where you can change the domain prefix. Enter your new desired domain prefix, then complete the wizard as normal.
7: This will update the websites with the new host header, create a new self-signed certificate for the domain and restart the required services.

You will then need to update your DNS management webpage so that exchange.contoso.com points to your IP address, and potentially acquire and install a commercial SSL certificate depending on your requirements.
