Basically I have introduced an Exchange Server 2007 Server, since this the mails from the copier don't send anymore, I used to use the Exchnage 2003 as the outgoing mail server but it doesn't work with the new one.

Have you changed the smtp server on the copier to point to the new exchange server?
Have you set your receive connector to anonymous in the 2007 server?

I had to make receive from anonymous, worked great, does this make the server less secure?

You can check to make sure your configuration is good, by running the best practices analyzer from the exchange management console, and also by running smtp diagnostics at mxtoolbox.com
