Just curious if it's possible to setup RWA without using SBS 2011, using the standard versions of Exchange 2010 and Server 2008.?

RWA is a feature unique to SBS, SBS Essentials, Windows Home Server, and Storage Server Essentials 2008 R2. There is no native way to get this on a standard server. You can, however, get some of that functionality by creating your own IIS web page and publishing links to SharePoint, OWA, and setting up an RD Gateway and RD Web Access server. It won't be RWA, but it'd offer many of the same features.
