How do I add an exchange server with the role of unified messages to an existing exchange environment?

I already have an exchange environment running, but I would like to add another server just for the Unified Messages, any idea on how to do it?

other question, all my exchange servers ( 6 total) are running Server 2008 SP2 ( not the R2 version) should I get the UM server on Server 2008 SP2? or I can go with Server 2008 R2?
