Scan to email on Bizhub c35 not working properly after SBS migration

I've got a Konica Minolta C35 that has issues with scan to email after migration from SBS 2003 with Exchange 2003 to SBS 2008 with Exchange 2007. I've changed all the SMTP server and DNS server settings and have a connector in Exchange 2007 with anonymous relay permissions. With that connector, I have SMTP authentication off on C35. The issue I have is that only 1 internal user can receive messages from device and only when device e-mail address is set to email@example.com. If I change it to firstname.lastname@example.org, she can't receive messages either. Exchange message tracking only shows messages that match the settings that work.
I've done this several other times on different servers and printers with no issues, but this is first time working with a Konica Minolta printer, so that's where I'm assuming the problem is.
Errors from C35 are no help as they just say "Error" and give no details.
