How do I make VPN connection from Windows to Linux (CentOs)

do I need any special software for the Windows or Linux to do it.

Take a look at OpenVPN (http://openvpn.net).  There are both server packages for Linux and Windows clients.

Is it possible to make the Linux route my network with VPN without NAT  ?

NAT and VPN are independent.  You can run VPN without NAT.
