Joomla overview - menu item type

Hi,
I'm starting with Joomla (1.6) and would appreciate if someone could give, or point me in the direction of, an overview of the menu item types in Joomla. Also to correct me if my understanding of Joomal is incorrect.
As I gather in Joomla to create a page you first of all create a Category and then you can create content in the way of articles that get assigned to a category.
Next you create a menu item to get the category to be associated to.
(thats what I understand Joomla to basically be)
Now the menu type start to confuse me. If I'm just looking to add articles I can look under the articles section.
Currently I just assign all menus as a category blog and have the articles in that category associated to it. Would that be correct to display several articles. are there any other ways, such as picking out lots of single articles from different categories?

Yes in fact pointing a menu to a category blog is one of many menu options. A lot of sites point their menus to single article pages. If you click on the NEW menu option you'll see the choices available to you.

so is it possible to display several articles that were in different categories.
Lets say I had 10 menu items some set up as category blog and some set up as single items.
I now want one new page / menu item that had 1 article from each of these 10 pages.
could an article have more than one category assign or can you just select individual article to appear in a page.

Not on the same page. You could have
MENU
   link to cat 1 articles
   link to cat 2 articles

If they're on the same page they probably should be in the same category.

You could do
MENU
   link to cat 1 articles
   link to article 1 regardless of cat
   link to article 2 regardless of cat

You cannot assign more than one article to a category.
You can assign more than one menu to an article or a category.
But each menu item is going to land on a new page, not the same page.

by the way, you can do what you're asking by doing this
SECTION 1
  CAT 1
     Article 1
  CAT 2
     Article 1

Now make a menu item to the section.
