I have a group of servers with 8 NIC's in them with esx5i installed and I plan to use vDS for ease of administration and the future use of the Nexus 1000v switches in the future.

My question is what configuration needs to be on the switches?  Is it just as simple as creating an 8 port etherchannel and trunk all required vLAN's and create port groups for each vLAN.

Yes, that is exactly it.  Make sure that the load balancing algorithm you choose on ESXi matches that configured on the switches

what is the best option? I have been reading about compatibly issues with LACP mode? Any advice is warmly welcomed.

We use the 'on' mode to avoid any LACP negotiation issues.  Again, you must ensure that the switch configuration matches the vSwitch uplink ports configuration.
