Outlook/Exchange Logging

We have just had an employee leave our firm suddenly. We suspect they may have copied sensitive outlook contacts before leaving from their own address book. Is there any logging feature in either Outlook or exchange which can confirm this?

They could also have hand written contact info, taken a picture of it with a phone camera, etc.  If they were not that smart, maybe they copied them to a pst and then emailed it to themselves.  It would be in sent items.  If they did it recently and then deleted the Sent item, then maybe in the deleted item cache.
