Prevent delete in mapped drive

I have a fileserver where  user folders are mapped to desktops as z drive.  how to prevent end users deleting file from this mapped folder.

On file system remove delete permissions on that folders (and contents) for that users.

You set that permissions on file server. It does not matter if files are accessed over network on mapped drive.
