This is probably simple but I can't find a property to change it... is it possible to angle the headers in a cxGrid? So instead of them being horizontal to be angled at a 45 degree?

it is possible, but it looks like crap ...
not very good drawing by devex

how to accomplish a little bit of what you want:

on the table view: set the headerheight to 100
on the column, styles, header (add new), set the font orientation to 3000

orientation is in 10th of a degree (360 degrees = 3600)

set the column wide enough to be able to read the text

you'll have to add a bug with devex to have this decently solved
