I currently have three remote offices soon to be four, the main office has a cisco 5505 as the firewall linking the remote offices via VPN .
My question is I need to install TMG mainly for use as a proxy server although i do understand it does a lot more, but will need time to learn how to use it and my offices are already up and running and I need a proxy sooner rather than later, is this a possible?

Yes you ca use it as proxy server with single NIC adapter, but it will not work as a firewall in this case just a proxy server.

Thank you for your reply and just one last question to you, is this an easy set up to configure and do I still install the full TMG product.
