How do I do a test restore of Exchange 2007

How do I know if my nightly backup of exchange 2007 is good.  How can I do a test restore without causing any problem to the current exchange server.

I am using backupexec 12.5

Create a recovery storage group then redirect the restore to it in backupexec.

if I do a full backup on the weekend and a differential on Mon- Fri.  Will I need to restore the Full backup first and then the differential? or can I just do the differential?
If you are just testing then just use the full backup.  

If this were a real situation and your server failed on Wednesday you would need to restore the full backup and then the incrementals from sun to wed.
