Issue changing last name on Exchange users mailbox

I have SBS 2008 with Exchange '07 on it. I followed the directions found here and elsewhere (I think...) on changing a users last name and alias within EMC. I have an issue where the users name changed, along with the alias and primary email address... and her email pops up in outlook, but when I log into her account to verify test messages sent to it, it is brand new and empty. It appears that the outlook on her PC has not changed, and still only receives email under her old name. I know I am not supposed to need to copy her mailbox over to the new name, so what did I do wrong here?
How can I change her name on her existing mailbox, with all her mail intact. This is Exchange and no I'm not certified.. Sometimes you just need to put the shoes on.
When first setup, there was an issue with the GAL and I am not sure if my IT guy disabled it, or disabled it's updating. At the time, we thought that an issue where a popup constantly asked you to connect to your mail.domain.com with a username/pw prompt regardless of correctly input creds, was caused by some issue with the GAL. I hope to address that issue with another thread though.
