I wear a lot of hats...

"The solutions and answers provided on Experts Exchange have been extremely helpful to me over the last few years. I wear a lot of hats - Developer, Database Administrator, Help Desk, etc., so I know a lot of things but not a lot about one thing. Experts Exchange gives me answers from people who do know a lot about one thing, in a easy to use platform." -Todd S.

If you are not removing their email address, you can just hide them from the address book.
Open the EMC (Management Console) and go to Recipient Configuration
Go into the properties of that mailbox and click on the checkbox that says "hide from Exchange address list"

You can either use EMC as mentioned by Spartan or you can use EMS (Exchange Management Shell) by entering the following command:

Get-Mailbox -OrganizationalUnit "Marketing" | Set-Mailbox -HiddenFromAddressListsEnabled $true

The command above will set the "Hide from Exchange address list" attribute on all users that are part of the Marketing group. So it is a easy way to do a lot of users at ones.

GAL usually updates in 24 hours, not unless your force it. Did you?
Also hiding those users, they will not be able to re-create their profile in Outlook.
Hendrik WieseInformation Security ManagerCommented:
Do the following to update your GAL:

1. Go to the EMC > Organization Configuration > Mailbox Node > Offline Address book tab and click update on the Default OAB,
2. Restart “Microsoft Exchange File Distribution” service
3. Force Outlook updating OAB.
Restart Outlook or press “Send/Receive” and click “send/Receive Groups” and click “Download Address Book”
