Removing Exchange 2003

We've just migrated to a hosted Exchange platform, so now need to uninstall Exchange from our organisation.

We have 4 x Exchange 2003 servers.

I tried to just uninstall Exchange from one, and it says that either I have to select a new recipient server for the domain, or disable mail for all users with mailboxes.

Whats the easiest way?
