How can I create virtal machine lab environment copying VMs from real bussiness environment

Hi Experts.

I want to know how I can create virtal machine lab environment copying from a real bussiness environment.

Currently, Domain Controller and Exchange server 2003 are running as virtual machine on the VMware in a real business environment. I want to install Exchange server 2010 and migrate 2003 to 2010.
I am using vSphere4 Advance.

Before this, I want to perform migration test to be sure it will be done perfectly.

I need to copy virtual machines of domain controller and exchange 2003 server and the VMs need to work on test lab environment.

which is the best and easiest way to do this ?
1. by using backup software like backup exec , taking full image of VMs and restore on the test lab environments.
2. by using taking image software like acronis true image, making image of VMs and restore on the test lab
3. or if any other options , please let me know.

What we use is the following:-

1. VMware Converter to convert LIVE VMs.
2. vSphere vCenter Clone option. (if we can get a moment to power off a machine)
3. Restore VM Backups to Research Labs. (use day old backups)

What Backup Software do you use?

Is you backup software able to take block level, disk basked VMDK backups?

Is this compatible with block level , disk basked vmdk back up ?

Do you mean I need to backup via SAN?

In my environment, Backup server doesn't have SAN interface. It takes backup via Ethernet.

My backup software is symantec backup exec.

In the lab, I can use this.

I have one HP server, and set up ESXi .
I want to use this as a lab test machine.
Storage is Local HDD.

My real envirnment is composed of SAN, Storage servers and a several ESXi servers,
and I will connect HP lab test machine to this real environment via FastEthernet.

In this case, which opthion is best ?

1. VMware Converter to convert LIVE VMs.

3. Restore VM Backups to Research Labs. (use day old backups)

or

USB HDD should be mounted on ESX and create storage to move ?

For Lab, the quickest option is 3. Restore VM Backups to Research Labs. (use day old backups)

USB is very slow.
