exch2010 new install

I ran the Microsoft exchange pre-deployment analyzer. the only issue was:
The forest functional level of the Active Directory forest is not Windows Server 2003 native or later. To install Exchange Server 2010, the forest functional level must be at least Windows Server 2003 native.

If I raise the forest will it cause any other issue (down time) while i go through the install?

I have 3 DC's...do i raise on all 3 or will it replicate from one DC to the others

No issue if you do not have any 2000/nt4 domain controllers in your network.
Just click raise domain to 2003 native, everything will be good.

you must do this on the fsmo (pdc) role owner, all the domain will be increased and replicated on all DC

I never had issue with forest/domain raising. The only risk is that you can't revert it back, so make a system backup before.
It won't impact any computer authentication/access to ressources but only affect the way  DC interact with each other.
