Be patient, and Wait....

It will complete if you have enough datastore storage space.

How long was the VM in snapshot?

Depending on how long the snapshot was in use, and the size of the snapshot, and speed of the datastore, snapshot deletetions, can sit at 95%-99% for days, I've seen a snapshot sit at 99% for 36 hours.

Now that you have started the Snapshot delete process, you should wait for it to complete, any attempt to restart services, or fiddle with the VM, could result in a corrupt virtual disk.

Do you know how many snapshots?

Size of snapshot?

How long has the snapshot been in use? e.g. when did you hit the take snapshot button?

How large is your exchange server store, and how many users, and emails a day?
