The body text of emails sent are blank

We just upgraded our server to SBS2011 with Exchange 2010.  The workstations are using the same Outlook 2003.  Two workstation when composing mail it displays fine.  When the mail is sent and you look at it in the sent folder the body text is blank.  The recipient receives the message and it is blank as well.  We changed the font and that made no difference.  The big difference is upgrading exchange 2003 to exchange 2010.  Doesnt make sense that the upgrade should effect composing email
