    I don't know exactly what you mean? :)
    If you just only want to get rid of Office from server, log on there as Administrator and go to "Control Panel". Find "Programs" and then on the list look for Microsoft Office 2007 and choose "Uninstall"

    Do you have this running in Linux in some way? Virtual server? (Linux zones).

    As iSiek says: Doesn't the regular "Remove application" works after you've started the Control Panel as an administrator?
