Install new Exchange 2007 Server to coexist with Exchange 2007 Server.

I have an existing Exchange 2007 Server with all roles in one machine.  Pretty small environment.  Its running on Server 2003 SP2 and not very stable.  Id like to add another Exchange 2007 Server running 2008R2 into the same domain, migrate the content to the new server, and decommission the old server.  Is there any reason why I cant install the new server into the existing environment with all the roles.?  Mabe I dont understand the roles enough, but Im just trying to make sure that 2 servers each holding all the roles wont fight with one another...etc.

No, there is no reason you cannot do this
Just ensure you update all of the internal and external URLs for the CAS role before changing the firewall to the new server

So...can there be more than one CAS server in the same Exchange organization?  If so, will either CAS server be smart enough to route email to the correct Mailbox Server, assuming I have more than one of those?  

I know about changing the MX and DNS stuff to get mail flowing to it...Im just unclear on the roles and if they will play nice if there are 2 boxes in the same role...

Hub transport role will load balance randomly between the two nodes
Since both Cas servers are in the same site either can handle traffic (just ensure certificate subject names are correct)
