email server

i have been taking care of an exchange server for a while, but for various reasons, i now need to setup a different email server.
the problem with exchange is i didn't really need to know much about how to truely setup an email server to send and receive emails.
this new email server isn't exchange, it's mailenable and the install is your typical install where you just click next a bunch of times, however, now that it is up and running, i can't seem to send and receive email
so i was wondering, is there some good tutorials in WWW land that teach and explain how to setup an email server to send and receive email, and why you might not be sending and recieving?

    some basics that apply to all email servers

    Firewall settings
    DNS Settings - internal and external Records - make sure you have MX record hosted. Internal setup so that the email server can resolve external domains
