Migrate DHCP from 2003 to 2008 R2 server

We are in the process of migrating an AD\DNS\DHCP server from a 2003 server to 2008. we have successfully done the AD and DNS parts but wanted some guidance on how to most efficiently do the DHCP part.

No I had not come across those articles. Does that process get all the custom dhcp configs or just the lease database?

That's a good question and I honestly don't know the answer.  I would expect any custom configuration to convey, but I've never tested it.  

That said, once the transfer has been done you can simply copy the configuration settings manually if necessary.

The configurations will transfer over to the new server if you follow the instructions properly since everything should be stored in the DB

Good article but one small thing. After the export from the old server does that automatically stop the dhcp service on the old server or do you need to do that manually? At what point should dhcp be disabled on the old server?

No, you need to stop the service on the old server (and eventually uninstalll it).

Disable DHCP on the old server just prior to firing up DHCP on the new one.
