Exchange 2003 Uninstall

I have migrated all of my users and public folders from Exchange 2003 to Exchange 2010 (As directed by the Exchange Server 2010 Deployment Assistant), however when I try to uninstall Exchange 2003, I get a message that states:

The component "Microsoft Exchange Messaging and Collaboration Services" cannot be assigned the action "Remove" because:

-This server is the Recipient Update Server for the domain acme.com.  You cannot uninstall this server until you select a different Recipient Update Server for this domain.

-You cannot remove a server that is a target bridgehead for a routing group connector.  This server is a target bridgehead for the following connectors: <Ex2010-Ex2003>

Given that, my questions are: 1) how exactly can I select a different recipient update server for the domain, and 2) how can I make the new Ex2010 the target bridgehead server?  (I tried removing that routing connector from both Ex2010 and Ex2003, but yet this problem persists)

Basically you need to update your recipient policies and remove the connector, read this blog to find out how.

This blog didn't exactly explain how to correct all of these problems, but it got me headed in the right direction.
