Index of links belonging to categories

I have several posts like this http://www.frugalmule.com/response-to-the-emails-concerning-my-dog/ with varied content.  

They all reference a different name after the .com/ which is based on the title but have all been added to a particular category.  How could I keep a perpetually updating list of links for all the current posts in a particular category (i.e. jokes)?

Are you creating Pages or Posts on the Wordpress backend?

Yes
Pages just have the permalink associated with the content.  But Posts can belong to one or more Categories which are defined under the Posts tab on the backend and assigned to the individual posts in the edit screen or in the listing of Posts via the Quick Edit function.

When a post is assigned to a category, it creates a special permalink under the category slug.  So if you create a category called Jokes with a slug of jokes and assign a post to it, you will be ale to see a list of all those posts by going to yoursite.com/jokes/

Thank you!  I do see those.  

The problem here is that I will end up needing to see the whole index of posts containing category (eg. jokes) when I am at another computer and/or otherwise not logged-in.  What I need is a single URL that I can go to whether logged-in or not, to see a list of posts of category (eg. jokes) that have been posted?

The default for me was 10 which I changed to 50.  Still not showing posts here though http://www.frugalmule.com/jokes

I see now.  Great answer!!  Let's talk sometime via chat.  I have a pretty nice setup.  Maybe we can both help eachother from time to time?  Not sure if that would work or not and certainly no hard feelings on my end if it didn't.

I only use gmail chat.  Yahoo tends to be trouble for me.  I should have said over the phone vs chat.  Wasn't thinking very clearly.  You have my email and my phone is above tedpenner.com and above frugalmule.com.
We're both on gmail, so I can chat that way.  I just tend not too for whatever reason.  I'm on an iPad for the next hour or two, though and chatting that way really sucks so I'll email you when I can finally sit down at a real keyboard.
