Styling the jQuery Date Picker

I need to change the colors and various aspect of the styling, before the jQuery Date Picker can be found to be acceptable by the site owners.

What things do I have the flexibility to style differently?
How would I go about making the change?

At the moment, I see the left and right arrows are being displayed at "Prev" and "Next" links. I want the arrows like in this demo:

Also, the calendar has an invisible backing but I'd like it to display as a normal calendar.

I would make the changes in jquery-ui.css for my proof of concept. What classs do I need to change? (I use jQuery UI CSS Framework 1.8.16)
