hello,
I am trying to understand how the messaging system works such as exchange, dominos server.
what are the things i need to be familiarised with , before installing configuring a mail server ?
Is that any tips or tutorials exists to understand the concept and implement them easily.

Seriously?  Yes, there are tons of manuals on each that you have mentioned.  First, you would want to understand how any MTA works...from SMTP to POP3, IMAP, and corresponding MX records, best practices on running SMTP for security, reputation, etc.  You must also understand the mail portions of DNS, especially today with all the SPAM fighting measures in place.

Start with the basics common to any email system, then learn in-dept about the package you choose.
There's a lot more to running a successful, reliable email server than, say, hosting some web page, where you just get it working and step back.  
When something goes wrong, and your email is integral to operations, you need to know how to troubleshoot and repair quickly.

Yes, mugojava, i am serious..:) i am mostly worked as a technician, so willing to do server sides projects..so i am interested to learn them detailly..

Do you suggest any free online guides easy to begin with ?

Great links provided,  but also make sure to study up on maintaining mail servers in general, and also the mail portions of DNS. What you select should also take into account the users on your system...if they will need remote access, smart phones, etc.
Before making the decision, also weigh in the pros and cons of using a hosted solution, even google apps. Taking the burden off of you for management and cutting the learning curve may be a good option.
