Hi,
I'm about to embark on xenserver and xendektop project
Firstly i would need to produce design docs, which i have not done before
Do anyone have good samples and templates of above?
also is there "ready-made" visio diagrams that I can download and modify - so i dont have to start drawing from scratch!!

The biggest hurdle you're going to face here is that such documents will usually contain very detailed and specific information about the customer which they would not want passed outside of their own company/the consulting company. There may even be financial or legal penalties for doing so.
On top of that, there's a lot of work goes into producing them, which most consultants would be a bit loathe to give away for free so someone else can get the benefit.
Are there no consultants within the company you work in that have other designs? Even if they don't directly relate to Citrix, they may help you with the structure and non-technical aspects of the design.

A rough outline of my method for an existing domain is basically
1. Install Citrix license server
2. Login to MyCitrix and allocate the licenses, then install them into the license server
3. Install Windows for the first XenApp server and perform initial configuration e.g. set IP, set hostname, join to domain
4. Install any available Windows updates
5. Install XenApp and create a new farm
6. Install recommended XenApp hotfixes or rollup packs (for XenApp 6.0 Citrix have a Technote)
7. Setup basic GPOs for login scripts, IE proxy etc
8. Setup basic Citrix policies for license server etc and publish Notepad app and Desktop
9. Install Web Interface and configure farm settings
10. Install CSG and configure farm settings
11. Test access through PNAgent and CSG to Notepad and Desktop
12. Install applications to first XenApp server noting every option selected or specified (or create MSI transforms if possible)
13. Install any newly detected Windows updates
14. Setup additional group policies, XenApp policies and published apps
15. Test access to all extra apps, make sure all policies are applying correctly
16. Repeat steps 3-6 to add any additional servers in the farm
17. Repeat step 12 for the other XenApp servers
Once all that is done, you should have your farm up and running and you can start doing some pre-production testing with users etc, making any tweaks as necessary.
