I use Outlook 2011 on Exchange 2010 and never had Outlook do anything that I had not wanted. Can you give more details ?

we use exchange server 2007. I think what happened is the person lost his iphone and we never changed the password and stuff started to disappear. we removed the device and it appeared again. I was told not to change the password. then all the emails ended up in the deleted items and then we changed the password, removed the device.

Havent seen anything disappear that I am aware of.

Remember that you can wipe the iPhone , the user can do this using OWA

tried to do that but it seems that the phone was not always connected to the internet. So i am going to assume that they were doing whatever from the iphone. (i.e. deleting contacts and email.)

Ok I understand. You probably already know this but if you upgrade to iOS5 you can enable iCloud on the device and use the find my iPhone feature which helps track the device. Another good application for securing iPhones is Sophos Mobile Control, we use this for a few of our clients and it's really good for forcing security and polices to iOS and Android devices. It's well worth looking at:
